Chocolopolis Founder Lauren Adler has built a reputation among the international craft chocolate community for her chocolate bar curation process, relying on a panel of customers and employees to blind taste the many samples Chocolopolis receives from around the world. Chocolate bars are added to the Chocolopolis collection only after performing well during the blind tasting. Fewer than 10% of the chocolate bars reviewed make it onto Chocolopolis’ shelves, which is organized by cacao origin. Seattle is an ideal place to hold these panels since Seattle chocolate lovers are among the most knowledgeable in the country.
Chocolopolis has built a national reputation, earning recommendations in publications like Forbes, Fodor’s, Travel + Leisure, Amex Essentials and Men’s Health. But to Adler, it has always been about her passion for craft chocolate and education. She said, “It is reaffirming to know that we’ve successfully built a knowledgeable and loyal chocolate community in Seattle that appreciates the experience we’ve created and is excited about our future. Our new location offers us the opportunity to hold more chocolate tasting classes, events and experiences, enabling us to continue to grow the chocolate community we’ve created. That’s the part of the business I love, and I look forward to introducing more Seattleites to the world of quality craft chocolate made with fine flavor cacao.”
Located in Seattle’s Interbay neighborhood and at www.chocolopolis.com, Chocolopolis invites customers to discover a world of chocolate. Featuring one of the country’s largest curated collections of single-origin chocolate bars, Chocolopolis also offers confections from world-class Chocolatiers such as Christopher Elbow and Kathryn Taylor. Chocolopolis opened in July 2008, just as the American craft chocolate movement began.
