Canceled - How Chocolate Gets Its Taste - Class

Wednesday, Oct 4th, 2017 at the Battery Park City campus of Institute of Culinary Education (ICE).

ChocolateLife creator Clay Gordon will be teaming up with Chef Michael Laiskonis, Creative Director of ICE and the director of their Chocolate Lab, for a fun evening class during ChocolateWeek.NYC.

The class is titled, How Chocolate Gets Its Taste, and, over the course of four hours, will include guided tastings of beans (different roasts of the same beans), liquor, made from the beans, chocolates (different percentages) made from the liquors, and pastries and confections made from those chocolates, which will be made by Michael in the lab at ICE. The through line will be to explore what influences how a chocolate tastes ... and then how fat, sugar, and temperature influence the taste of what's made with the chocolate. Guests will get a solid introduction to the processes of making chocolate at many levels.
