Vegan crepes may sound funny but they taste delish. Are you familiar with the much admired typical French variety made with milk, eggs and flour? Are you following a diet that just doesn’t add dairy to the mix? Well, before you toss that crepe pan, consider today’s wonderful alternative. Vegan Crepes, Savory and Sweet
Crepe Ingredients:

1 and ½ cups buckwheat flour

1 teaspoon baking powder

1 and ½ cups coconut milk

1 tablespoon extra virgin olive oil

Instructions
  1. Mix all the ingredients in a bowl making sure there are no lumps
  1. Heat some oil in a pan over medium high.
  1. Pour some batter thinly into the skillet covering the bottom.
  1. Cook for 1 or 2 minutes the using a butter knife loosen the edges and gently flip the crepe.
  1. Cook until brown the other side of the crepe.

Savory Avocado Filling

Ingredients

1 1/2 cups fresh California Avocados, diced

1/2 cup cherry or grape tomatoes, diced

1 tablespoon red onion, diced

Pesto – recipe follows

Pesto

1/2 cup rehydrated sun-dried tomatoes

1 1/2 cups fresh basil (loosely packed)

2 TBSP olive oil

3 TBSP soy milk

1 cup pine nuts

1/3 cup nutritional yeast

4 cloves garlic

1/2teaspoon salt

1/2 teaspoon black pepper

Directions for Pesto
  1. Combine all ingredients in a food processor. Make sure nuts are ground yet pesto still has texture.

Directions for Crepe Construction
  1. Spoon a small amount of pesto on crepe
  1. Sprinkle on diced avocados, onion and tomatoes.
  1. Fold crepe over and enjoy.

Sweet Apple Pie Filling

Ingredients

One apple of your choice

One tablespoon cinnamon sugar, more or less optional

Cooking spray

Directions
  1. Skin and slice apple thinly
  1. Warm skillet on medium high then spray with cooking spray
  1. Lay apple slices in skillet and sprinkle with cinnamon sugar
  1. Cook until apples are tender

Directions for Crepe Construction
  1. Spread apples on crepe
  1. Fold crepe and enjoy!
