Gluten Free Chocolate Cake with Glaze
1/2 cup coconut flour
1 teaspoon baking powder
6 tablespoons butter
1/3 cup cocoa powder
3/4 cup sugar
1/2 teaspoon salt
2 teaspoon vanilla extract
6 large eggs
1 cup semisweet or bittersweet chocolate chips
1/2 cup heavy cream
Preheat the oven to 350°F. Grease an 8″ square cake pan.
Combine the coconut flour and baking powder and set aside.
Melt the butter and cocoa in the microwave. Stir until well blended.
Whisk the sugar, salt, vanilla, and eggs into the butter-cocoa mixture.
Next add the coconut flour and baking powder, whisking until smooth.
Once it’s all mixed pour into the prepared pan and allow it to sit for 10 minutes before baking.
Bake for 30-35 minutes and until a toothpick comes out clean.
Cool the cake completely before glazing and remove from the pan.
To create the glaze: Place the chocolate and cream in a microwave-safe bowl. Heat until the cream is hot.
Stir until the chocolate melts and the mixture is completely smooth.
Once mixed slowly pour the glaze over the cake. Spread the glaze over the cake allowing it to drip over the sides. Let the glaze sit for a few hours before serving.
